Very Berry Summer Pie (Delicious All Year Round)
I got a late night urge for pie and pulled together this simple and quick recipe with ingredients I had around the house. Although you may not have a pie crust or berries in your fridge, this pie is so simple it is worth the trip to the store to grab what you need.
1 cup blueberries
1 cup strawberries
1 cup peaches
1/4 cup water
1/2 cup sugar
2 tbs corn starch
1/2 teaspoon cinnamon
store bought vegan pie crust (I use Oronoque Orchards 9" Deep Pie Crust)
Preheat over to 375 degrees and defrost pie crust if frozen. Over medium heat stir together fruit, sugar, water and corn starch. Stir continuously until the compote begins to bubble and thicken. Pour the fruit mixture into the pie crust, cover with aluminum foil and bake for 20 minutes. After 20 minutes remove the foil and return to the over to bake for an additional 20 minutes, or until crust is browned. Allow the pie to set for approximately one hour before slicing.
